festive Christmas cherry nut bread recipe

ingredients for festive cherry nut bread

  • Maraschino Cherries -16 ounce jar (11⁄2 cups chopped cherries and 2/3 cup juice)
  • Granulated sugar 2 c
  • Eggs, four
  • Flaked Coconut, 1 c
  • Walnuts, pecans or almonds, chopped, 11⁄2 c
  • Flour, 3 c
  • Baking powder, 1 Tbsp
  • Salt, 1⁄2 tsp

instructions for Festive cherry nut bread

  1. Preheat the oven to 350 degrees F. Grease and flour one 8-inch by 4-inch or two 6-inch by 3-inch mini loaf pans.
  2. Combine the flour, baking soda and salt in a large bowl with a wire whisk. Set the bowl aside. In a smaller bowl, beat the sugar and the eggs. Beat in the butter, milk and vanilla until well mixed. Add the wet ingredients to dry. Only mix until moistened. Carefully, stir in nuts, coconut and cherries.
  3. Spoon the batter into the prepared pans.
  4. Bake the 8-inch pans for 55 – 60 minutes. Bake the mini pans for 45 minutes.

Cool in pans on cooling rack for five minutes. Remove the bread from and place on cooling racks.

Most quick breads will taste better if it is wrapped up tightly and allowed to rest for a day before eating. That makes it great for git giving too.

This Maraschino Nut Bread Freezes quite well if wrapped properly.  Wrap bread tightly in plastic wrap and then place it in a resealable freezer bag.

If you are using nuts that already have salt on them do not add salt to the batter. Trust me on this one as it is really gross. I make lots of mistakes in kitchen and hope to spare you from cooking misfortunes.
